Preparation
In a bowl, using a whisk, mix the corn flour, the Neo-Flour and the salt.
Add the oil and half of the boiling water to the spoon, then knead with your hands. Slowly add the rest of the water to adjust the consistency of the dough, which should not stick or be too dry.
Shape the dough into a ball and wrap it in cling film, then let it rest in the refrigerator for 15 minutes.
Divide the dough into six equal pieces.
Sprinkle the work surface with a little Neo-Flour, then using a rolling pin, gently spread each ball to make patties.
Place the first tortilla in a non-stick skillet over high heat, previously greased with a little cooking oil. Turn it regularly, about every 15 to 20 seconds for even cooking.
Do the same to cook the other tortillas.
