250g Neo-Flour Premium Manioc
140g rice flour
10g guar gum
10g dehydrated baker's yeast
Some seeds (sunflower, sesame, flax, poppy, squash)
450ml lukewarm water
2 tbsp. olive oil
Put the Neo-Flour, rice flour, corn-starch, guar gum, plus salt and half the seeds in a container. Pour in warm water and olive oil, then mix with a wooden spoon to homogenize everything.
Cover a casserole (about 22cm) with parchment paper. Flour your hands well and form a large ball with the dough then place it in your casserole. Brush the bread with water with a brush and close the casserole dish. Let swell for 1 hour in the oven at 35 °C.
When the bread is well inflated, brush with salt water and sprinkle with the seeds. Make a cross incision in the center of the ball.
Put in the oven, without preheating, then set the temperature to 240 °C. Let cook 50min.
