Preheat the oven to 200 °C
In a saucepan, combine the milk, water, diced butter, vanilla sugar and salt. Bring to a boil over medium heat. Remove from the heat, pour the Neo-Flour and mix with a whisk until well incorporated. Put back on low heat, about 2-3 min, the dough will then peel off the edges of the pan.
Let stand at room temperature 5 min. Then add the eggs, one by one, mixing well with a wooden spoon between each egg. You have to be patient and never stop stirring.
Place teaspoons of dough spaced 2-3 cm apart on a baking sheet lined with parchment paper, then place on each a few pearls of sugar.
Bake 15 min at 200 °C, then lower the temperature to 180 °C and cook for another 15 minutes.
